Grilled Romaine Caesar Salad

Description

A smoky, crunchy, and creamy grilled twist on the classic Caesar salad, featuring charred romaine, toasted panko, seaweed, and a rich fish-free vegetarian Caesar dressing.


Ingredients

2 heads romaine lettuce, halved

2 tsp olive oil, divided

1/4 cup panko breadcrumbs

1 Tbsp salted butter

1 Tbsp Everything Bagel Seasoning

1/2 package seaweed sheets (crumbled)

1/2 cup shredded Parmesan cheese

1 cup mayonnaise (regular or vegan)

1/4 cup lemon juice

2 large garlic cloves, minced

1 Tbsp mellow white miso

1 Tbsp Dijon mustard

1 1/2 tsp freshly cracked black pepper

1/2 tsp sea salt

2 tsp granulated sugar

1/2 cup water

1/4 cup olive oil (for dressing)

1/2 package seaweed sheets (crumbled into dressing)


Instructions

  1. Preheat grill to high heat.
  2. Rinse and halve the romaine, keeping the root intact. Pat dry thoroughly and brush cut sides with 1 tsp olive oil.
  3. Grill romaine cut-side down for about 3 minutes, turning to lightly char all sides while keeping the center crisp. Transfer to the fridge to cool slightly.
  4. Toast panko breadcrumbs in a skillet with butter and remaining 1 tsp olive oil until golden brown. Set aside.
  5. Blend mayonnaise, lemon juice, garlic, miso, Dijon mustard, black pepper, sea salt, sugar, water, and olive oil until smooth.
  6. Stir crumbled seaweed into the dressing.
  7. Place grilled romaine on a serving platter. Drizzle generously with dressing, then top with toasted panko, Everything Bagel seasoning, additional seaweed, and shredded Parmesan.
  8. Serve immediately.

Notes

Use vegan mayo, vegan butter, and vegan Parmesan to make it fully vegan.

Add cherry tomatoes or sliced red onion for extra color.

Serve with grilled tofu, chickpeas, or chicken for more protein.

Swap Everything Bagel seasoning for sesame seeds, garlic powder, and flaky salt.

Sear romaine in a cast-iron skillet if you don’t want to grill.
