Description

This Ground Beef and Fried Cabbage recipe is a quick, hearty, and budget-friendly one-pan meal. Packed with lean ground beef, sautéed cabbage, shredded carrots, and a hint of tomato paste, it’s a satisfying dish that’s both nutritious and flavorful. Ready in just 20 minutes, it’s perfect for busy weeknights and can be easily customized with other proteins or veggies.

Ingredients

Cabbage (chopped or shredded)

1 lb ground beef (lean)

1 cup shredded carrots

2 tablespoons tomato paste

1 medium onion, chopped

Salt and pepper to taste

1 teaspoon paprika

1 cup veggie stock or 1 bouillon cube

Instructions

  • Cook the Beef:
Heat oil in a large skillet over medium heat. Add the ground beef, season with salt and pepper, and cook until browned. Remove from the skillet and set aside.

  • Sauté the Onion:
In the same skillet, sauté chopped onions until translucent.

  • Add the Carrots:
Stir in the shredded carrots and cook for about 2-3 minutes until softened.

  • Incorporate Tomato Paste:
Stir in the tomato paste and veggie stock (or bouillon cube). Let the mixture simmer for a few minutes to combine the flavors.

  • Cook the Cabbage:
Add the chopped cabbage to the skillet, season with salt, pepper, and paprika. Cover the skillet and cook until the cabbage is tender, about 5-7 minutes.

  • Combine and Serve:
Return the cooked ground beef to the skillet, stirring until everything is well combined. Garnish with fresh herbs, if desired, and serve.

Notes

Add Rice: Stir in cooked rice for a fuller meal.

Low-Carb: Substitute rice with cauliflower rice or broccoli rice.

Spicy Option: Add red pepper flakes or chili powder for a bit of heat.
