Description

A hearty and comforting casserole made with lean ground beef, creamy soups, tender potatoes, and plenty of melted cheddar cheese. Simple to prepare, family-friendly, and perfect for busy weeknights.


Ingredients

1 pound lean ground beef (93% lean)

1 (10.5 oz) can condensed cream of celery soup

1 (10.5 oz) can condensed cream of cheddar cheese soup

1 (28 oz) bag frozen cubed potatoes with onion and bell peppers

Salt and black pepper, to taste

2 cups shredded cheddar cheese, divided

Optional: chopped fresh parsley, sliced green onions (for garnish)


Instructions

  1. Preheat oven to 350°F (175°C) and lightly grease a 9×13-inch baking dish.
  2. In a skillet, brown the ground beef over medium-high heat for 5–7 minutes, until no pink remains.
  3. In a large bowl, combine the cooked beef, frozen potato mixture, condensed soups, 1 cup shredded cheddar cheese, salt, and pepper.
  4. Spread the mixture evenly into the prepared baking dish.
  5. Sprinkle the remaining 1 cup of cheddar cheese evenly on top.
  6. Cover with foil and bake for 30 minutes. Remove foil and bake for another 15 minutes, until cheese is golden and bubbly.
  7. Garnish with parsley or sliced green onions before serving.

Notes

Add sausage for extra flavor or stir in sour cream for a creamier casserole.

For spice, add diced jalapeños or substitute pepper jack cheese.

Use ground turkey for a lighter version.

Mix in peas, corn, or green beans for added nutrition.

Freeze unbaked casserole for up to 2 months, wrapped tightly in foil.
