Description

Ingredients

1 lb ground chicken

½ cup breadcrumbs (or gluten-free breadcrumbs)

¼ cup finely chopped onion

1 egg

2 tablespoons coconut aminos

1 teaspoon garlic powder

Salt and black pepper to taste

1 tablespoon olive oil

1 cup mushrooms, sliced

½ cup beef broth (or chicken broth)

¼ cup heavy cream (or coconut cream for dairy-free)

1 tablespoon flour (or gluten-free flour)

1 tablespoon fresh parsley, chopped (for garnish)


Instructions

  • In a large bowl, combine ground chicken, breadcrumbs, chopped onion, egg, coconut aminos, garlic powder, salt, and pepper. Mix well and form the mixture into 4–6 oval patties.

  • Heat olive oil in a large skillet over medium heat. Add patties and cook for 4–5 minutes on each side until browned and cooked through. Remove patties and set aside.

  • In the same skillet, add sliced mushrooms and cook for 3–4 minutes until softened.

  • Sprinkle flour over mushrooms and stir. Gradually add beef broth while stirring to create a smooth sauce.

  • Simmer sauce for 5–6 minutes until it thickens, then stir in heavy cream (or coconut cream) and adjust seasoning as needed.

  • Return the patties to the skillet and simmer for another 5 minutes, allowing the flavors to meld together.

  • Garnish with fresh parsley and serve.

Notes

To make low-carb, substitute breadcrumbs with almond flour.

Ground turkey can also be used instead of ground chicken for a different flavor.

Add extra veggies like spinach, peas, or carrots to the mushroom gravy for added nutrition.
