Description

Juicy oven-baked Hasselback chicken breasts stuffed with smoky turkey, sharp cheddar cheese, and tangy barbecue sauce for an easy yet impressive dinner.


Ingredients

4 skinless, boneless chicken breasts

Salt, to taste

Black pepper, to taste

1/2 cup barbecue sauce

12 ounces smoked turkey, cooked and chopped

8 ounces sharp cheddar cheese, shredded


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Place the chicken breasts on a cutting board and carefully cut several evenly spaced slits across the top of each breast, making sure not to cut all the way through.
  3. Season the chicken on all sides with salt and pepper.
  4. Brush the barbecue sauce generously over the chicken, allowing some sauce to drip into the slits.
  5. In a bowl, mix the shredded cheddar cheese with the chopped smoked turkey.
  6. Stuff the cheese and turkey mixture into each slit in the chicken breasts. Sprinkle any extra filling over the top.
  7. Place the chicken in a baking dish and loosely cover with foil.
  8. Bake for 30 minutes, removing the foil during the last 10 minutes so the cheese can melt and lightly brown.
  9. Ensure the chicken reaches an internal temperature of 165°F (74°C) before serving.

Notes

You can substitute the barbecue sauce with honey mustard or garlic sauce.

Mozzarella or Monterey Jack cheese can be used instead of cheddar.

Add sautéed onions or bell peppers for extra flavor.

Covering the chicken with foil helps keep it juicy.

Leftovers store well and reheat nicely.
