Ingredients
- ½ cup mashed bananas
- ¾ cup almond butter
- ⅓ cup honey
- 1 teaspoon vanilla extract
- 2½ cups old-fashioned rolled oats
- 1 teaspoon cinnamon
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ cup golden raisins
- ½ cup dark chocolate chips
- ¼ cup pepitas
- 2 tablespoons flax seeds
Instructions
- Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, mix together the mashed bananas, almond butter, honey, and vanilla extract until smooth.
- Stir in the oats, cinnamon, baking powder, and salt until well combined.
- Fold in the golden raisins, dark chocolate chips, pepitas, and flax seeds.
- Scoop heaping tablespoons of dough onto the prepared baking sheet, flattening each slightly.
- Bake for 12–15 minutes, or until cookies are lightly golden and set.
- Allow to cool on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.
Notes
- Ensure bananas are fully mashed for better consistency.
- Substitute almond butter with peanut butter if desired.
- Store leftover cookies in an airtight container for up to a week.
