Description

Ingredients

For the Cake:

  • 1/3 cup olive oil (or neutral oil/melted butter)
  • 1/3 cup maple syrup (or honey)
  • 3/4 cup milk (of choice)
  • 1 egg
  • 1 tsp vanilla extract
  • 1 ¼ cups oat flour
  • 1/4 cup cacao powder
  • 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/4 tsp espresso powder (optional)

For the Glaze:

  • 1/2 cup dairy-free chocolate chips
  • 1 tbsp oil
  • 1/4 cup chopped walnuts

Instructions

1. Prepare the Cake:

  1. Preheat the Oven: Set to 350℉ (175℃). Line a 6-inch round cake pan with parchment paper.
  2. Blend the Batter: Add all cake ingredients to a blender in the order listed. Blend for 5-10 seconds until smooth.
  3. Bake: Pour batter into the prepared pan and bake for 35-40 minutes, or until a toothpick inserted comes out mostly clean.
  4. Cool: Let the cake cool in the pan for 10 minutes, then transfer to a wire rack to cool completely before adding the glaze.

2. Prepare the Glaze:

  1. Melt Chocolate: In a small saucepan over low heat, stir together oil and chocolate chips until smooth.
  2. Add Nuts: Stir in chopped walnuts and drizzle over the cooled cake.
