Ingredients

  • 3 ripe bananas
  • 2 eggs (or flax eggs for a vegan option)
  • 1/2 cup nut butter (such as almond or peanut butter)
  • 1 1/2 cups oat flour (or a combination of oat flour and protein powder)
  • 1/3 cup cocoa powder
  • 1/2 cup sugar-free sweetener (such as monk fruit)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tsp baking powder
  • 1/4 cup chocolate chips (optional, for added chocolate flavor)

Instructions

  • Preheat Oven: Preheat your oven to 350°F (180°C) and line a 20 cm (7.9 inches) loaf pan with parchment paper.
  • Mash Bananas: In a large bowl, mash the bananas until smooth.
  • Mix Wet Ingredients: Stir in the nut butter, eggs, sweetener, vanilla extract, and salt. Mix thoroughly.
  • Add Dry Ingredients: Add the oat flour, cocoa powder, and baking powder. Stir until combined.
  • Fold in Chocolate Chips: If using, fold in the chocolate chips.
  • Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 30-40 minutes, or until a toothpick inserted comes out clean.
  • Cool and Slice: Let the bread cool in the pan for about 15 minutes, then remove from the pan and allow it to cool completely before slicing.
