Description

These High Protein Kodiak Cake Pumpkin Chocolate Chip Cookies are soft, flavorful, and packed with protein thanks to Kodiak Power Cakes mix. With pumpkin, warm spices, and chocolate chips, they make a quick and healthy-ish fall treat ready in just 23 minutes.


Ingredients

1 cup Kodiak Power Cakes mix

1/2 cup canned pumpkin puree

1/4 cup water

2 tsp vanilla extract

1/2 cup semisweet chocolate chips

1/2 tsp pumpkin spice blend

1/2 tsp ground cinnamon


Instructions

  1. Preheat the oven to 325°F (163°C).
  2. In a medium bowl, combine the Kodiak Power Cakes mix, pumpkin puree, water, vanilla extract, chocolate chips, pumpkin spice blend, and cinnamon. Stir until well mixed.
  3. Scoop the batter onto a baking sheet or spread evenly in a baking pan. Optionally, sprinkle extra chocolate chips on top.
  4. Bake for 10–12 minutes, or until a toothpick inserted in the center comes out clean.
  5. Allow cookies to cool slightly before cutting and serving.

Notes

Add walnuts, pecans, or dried cranberries for extra flavor.

Use dark or white chocolate chips to change up the taste.

Top with roasted pumpkin seeds for crunch.

For a vegan version, use plant-based protein pancake mix and flax eggs.

Spread the batter in a dish to make cookie bars instead of cookies.
