Description

Holy Yum Chicken features juicy chicken thighs coated in a sweet and savory maple-Dijon sauce. With just a few simple ingredients and quick preparation, this easy, flavorful dish is perfect for a weeknight dinner that the whole family will love.

Ingredients

  • 6 boneless, skinless chicken thighs
  • ¼ cup Dijon mustard
  • ¼ cup pure maple syrup
  • 1 tablespoon rice wine vinegar
  • Salt, to taste
  • Ground black pepper, to taste
  • 1 tablespoon cornstarch
  • Fresh rosemary for garnish (optional)

Instructions

  • Preheat the Oven:
Preheat your oven to 450°F (230°C). Line an 8×8-inch baking pan with two layers of aluminum foil.

  • Make the Sauce:
In a bowl, whisk together Dijon mustard, maple syrup, rice wine vinegar, salt, and pepper.

  • Coat the Chicken:
Place the chicken thighs in the prepared pan and coat them thoroughly with the sauce.

  • Bake the Chicken:
Bake the chicken for 40 minutes, or until the chicken is cooked through and the internal temperature reaches 165°F (74°C).

  • Rest the Chicken:
After baking, let the chicken rest for 5 minutes before transferring it to a plate.

  • Thicken the Sauce:
Whisk cornstarch into the remaining sauce in the pan to thicken it, then pour the sauce over the chicken.

  • Garnish and Serve:
Garnish with fresh rosemary, if desired, and serve immediately.

Notes

  • Chicken Breasts: You can substitute boneless skinless chicken breasts, but reduce the cooking time to 25-30 minutes.
  • Vinegar Alternatives: Use apple cider vinegar or champagne vinegar instead of rice wine vinegar for a different flavor.
  • Thicken the Sauce: If the sauce is too runny, add more cornstarch to thicken it to your desired consistency.
  • Freezing: You can freeze the cooked chicken with sauce for up to 3 months. Thaw and reheat before serving.
