Description

A luscious and flavorful blueberry butter perfect for spreading on toast, muffins, scones, pancakes, or waffles.


Ingredients

1 cup fresh blueberries

1/4 cup honey

1/2 cup softened butter

1 teaspoon lemon juice


Instructions

  1. In a small saucepan over medium heat, combine the fresh blueberries and honey.
  2. Stir the mixture occasionally as it cooks for about 8-10 minutes, until the blueberries burst and release their lovely juices.
  3. Remove the pan from heat and let it cool for 5-10 minutes.
  4. Transfer the blueberry mixture to a bowl and mash it with a fork or use an immersion blender to blend briefly, aiming for a mostly smooth texture while keeping some chunkiness.
  5. Add the softened butter and lemon juice to the bowl, mixing thoroughly until everything is well combined.
  6. Transfer your delightful blueberry butter to an airtight jar or container.
  7. Pop it in the fridge for about 2-3 hours to firm up.
