Ingredients

  • 1 cup creamy peanut butter
  • 1/3 cup coconut flour
  • 1/4 cup maple syrup
  • 1 cup chocolate chips (dark or semi-sweet)
  • 1/2 tablespoon coconut oil

Instructions

  1. In a medium bowl, combine peanut butter, coconut flour, and maple syrup. Stir until smooth.
  2. Roll mixture into 1-inch balls and flatten into oval egg shapes with your fingers.
  3. Place the shaped eggs on parchment paper on a cookie sheet and freeze for 30 minutes.
  4. Melt chocolate chips and coconut oil in a microwave-safe bowl in 30-second intervals, stirring between, until smooth.
  5. Using two forks, dip each peanut butter egg into the melted chocolate, letting the excess drip off.
  6. Transfer coated eggs back onto parchment paper to harden.
  7. Optional: Drizzle additional melted chocolate over the eggs once hardened for decoration.
  8. Refrigerate until ready to enjoy.
