- Salt & pepper, to taste
Instructions
1️⃣ Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
2️⃣ Prepare the carrots: Trim the ends and peel if necessary.
3️⃣ Make the glaze: In a small bowl, whisk together olive oil, honey, balsamic vinegar, apricot preserves, garlic powder, thyme, ground mustard, cumin, salt, and pepper.
4️⃣ Coat the carrots: Toss the carrots with the glaze until evenly coated.
5️⃣ Roast: Spread the carrots in a single layer on the baking sheet. Roast for 25-30 minutes, flipping halfway through, until tender and caramelized.
