Ingredients
2 cups plain Greek yogurt
1 cup heavy cream
¾ cup honey
2 tablespoons dried culinary lavender
1 teaspoon vanilla extract
A pinch of salt
Optional: Fresh lavender sprigs for garnish
Instructions
- In a saucepan, mix the honey, heavy cream, and dried lavender.
- Heat the mixture over low heat until it’s warm but not boiling, stirring occasionally to dissolve the honey.
- Once warm, remove the pan from the heat and let the lavender steep for about 2 hours.
- Strain the mixture through a fine mesh sieve into a bowl to remove the lavender buds.
- Stir in the plain Greek yogurt, vanilla extract, and a pinch of salt until smooth and well combined.
- Place the yogurt mixture in the refrigerator for about 30 minutes to chill.
- Pour the chilled mixture into an ice cream maker and churn according to the manufacturer’s instructions for 20-30 minutes until it reaches a soft serve consistency.
- Transfer to a lidded container or bowl and freeze for an additional 2-3 hours for a firmer consistency.
- Scoop out and serve chilled, garnished with fresh lavender sprigs if desired.
Notes
For a vegan version, use a dairy-free yogurt and coconut cream.
Enhance flavor by adding lemon zest or vanilla bean.
Substitute honey with maple syrup or agave nectar if preferred.
