Ingredients
1 medium butternut squash (2–3 lbs), peeled, seeded, and cubed (1-inch pieces)
4 boneless, skinless chicken breasts (or thighs)
3 tbsp olive oil, divided
2 tbsp honey
1 tsp ground cinnamon
1 tsp smoked paprika
1 tsp dried thyme or rosemary
3 cloves garlic, minced
Salt and pepper, to taste
Fresh parsley or thyme, chopped (for garnish)
Instructions
- Preheat the oven: Set oven to 425°F (220°C) and prepare a large baking sheet.
- Season the squash: In a large bowl, toss cubed butternut squash with 2 tablespoons olive oil, honey, cinnamon, salt, and pepper. Spread evenly on the baking sheet.
- Prepare the chicken: Rub chicken breasts with the remaining 1 tablespoon olive oil. Season with smoked paprika, dried thyme or rosemary, minced garlic, salt, and pepper.
- Arrange and roast: Place the seasoned chicken on the same baking sheet as the squash, leaving space between pieces. Roast for 25–30 minutes, flipping chicken halfway through, until the chicken reaches 165°F (74°C) and squash is golden and tender.
- Garnish and serve: Sprinkle with fresh parsley or thyme and drizzle a touch of honey over the chicken if desired. Serve warm.
