Description

Easy, melt-in-your-mouth honey roasted sweet potatoes with caramelized edges and a bright honey–lemon butter glaze. A quick, flavorful side dish perfect for weeknights or holidays.


Ingredients

2 pounds sweet potatoes, peeled and chopped

1 tablespoon extra virgin olive oil

2 tablespoons melted butter

1 lemon, juice and zest

1/4 cup honey

Salt, to taste


Instructions

  1. Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper or foil.
  2. Peel and chop the sweet potatoes into bite-sized pieces. Add them to a large bowl and season with salt.
  3. In a small saucepan, heat the butter and olive oil over medium heat until the butter melts.
  4. Stir in the lemon juice, lemon zest, and honey. Simmer for 1 minute on low heat.
  5. Pour the honey–lemon butter over the sweet potatoes and toss to coat well.
  6. Spread the potatoes evenly on the prepared baking sheet.
  7. Roast for 25 minutes, or until golden and tender, adding extra time if needed.

Notes

Add cinnamon or smoked paprika for extra warmth.

Mix in a little maple syrup for richer sweetness.

Fresh herbs like rosemary or thyme add a savory balance.

Cut potatoes evenly for consistent cooking.

Reheat in a hot oven to regain crisp edges.
