Description

These Instant Pot Chicken Gyros are a quick and flavorful Greek-inspired meal with tender chicken marinated in lemon, Greek seasoning, and yogurt. Cooked in the Instant Pot for convenience, served with fresh toppings like cucumber, tomato, and feta, and complemented by homemade tzatziki sauce, this dish is perfect for weeknights, meal prep, or a party!


Ingredients

For the Chicken:

2 lbs boneless skinless chicken breasts

2 tablespoons olive oil

Juice of 1 lemon

¼ cup red wine vinegar

2 tablespoons Greek seasoning

1 cup Greek yogurt

½ cup chopped red onion

2 tablespoons dried dill

For the Toppings:

Pita bread or naan

Lettuce

Tomatoes

Kalamata olives

Feta cheese

Cucumbers

Tzatziki sauce

For the Tzatziki Sauce:

1 cup Greek yogurt

1 tablespoon dried dill

1 small English cucumber, chopped

1 teaspoon onion powder

Salt and pepper to taste

½ teaspoon lemon juice


Instructions

Add chicken, olive oil, lemon juice, red wine vinegar, Greek seasoning, Greek yogurt, red onion, and dill to the Instant Pot.

Close the lid, set the pressure valve to “sealing,” and cook on high pressure for 30 minutes.

Allow the pressure to naturally release, then shred the chicken with a fork.

While the chicken cooks, prepare the tzatziki sauce by combining yogurt, dill, cucumber, onion powder, salt, pepper, and lemon juice in a bowl.

Serve the shredded chicken in pita or naan with the toppings and tzatziki sauce.

Notes

Vegetarian Option: Replace the chicken with falafel or grilled vegetables.

Gluten-Free: Serve the chicken in gluten-free pita or lettuce wraps.

Spicy Twist: Add red pepper flakes or hot sauce to the tzatziki sauce for extra heat.
