Description

A rich and comforting soup inspired by the classic Philly cheesesteak sandwich. Tender steak, sautéed onions and peppers, and a creamy cheese-filled broth come together for a hearty and satisfying meal.


Ingredients

1 pound sirloin steak, thinly sliced

2 tablespoons olive oil

1 medium onion, chopped

1 medium bell pepper, chopped

2 cloves garlic, minced

4 cups beef broth

1 cup heavy cream

2 tablespoons Worcestershire sauce

1 teaspoon dried thyme

1 teaspoon salt

1 teaspoon black pepper

8 ounces cream cheese, softened

1 cup shredded provolone or mozzarella cheese


Instructions

  1. Slice the sirloin steak into thin strips.
  2. Heat olive oil in a large pot over medium heat and cook the steak until browned. Remove the steak from the pot and set aside.
  3. In the same pot, sauté the chopped onion and bell pepper for several minutes until softened.
  4. Add the minced garlic and cook for 1 minute while stirring.
  5. Pour in the beef broth and scrape the bottom of the pot to deglaze.
  6. Add Worcestershire sauce, dried thyme, salt, and black pepper. Let the soup simmer for 10–15 minutes.
  7. Reduce the heat to low and stir in the heavy cream.
  8. Add the cream cheese in small pieces, stirring continuously until fully melted and smooth.
  9. Return the cooked steak to the pot and allow it to warm through.
  10. Stir in the shredded provolone or mozzarella cheese until melted and the soup becomes creamy.
  11. Taste and adjust seasoning if needed, then serve warm.

Notes

Add sliced mushrooms with the onions and peppers for extra depth of flavor.

For a spicier soup, include red pepper flakes or diced jalapeños.

Diced potatoes can be added during simmering to make the soup heartier.

Ribeye can be used instead of sirloin for a richer flavor.

If the soup thickens during storage, add a splash of broth or cream when reheating.

Avoid freezing as the dairy ingredients may change texture.
