Description

Ingredients

2 cups all-purpose flour

1 teaspoon baking powder

½ teaspoon salt

½ cup unsalted butter, softened

¾ cup granulated sugar

1 large egg

1 teaspoon vanilla extract

1 cup fresh peaches, peeled and diced

Powdered sugar (for dusting)


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, whisk together the flour, baking powder, and salt until well combined.
  3. In a large bowl, beat the softened butter and sugar together until light and fluffy, about 3-4 minutes.
  4. Mix in the egg and vanilla extract until fully incorporated.
  5. Gradually add the dry ingredients to the wet mixture, stirring until just combined. Be careful not to overmix.
  6. Gently fold in the diced fresh peaches, being careful not to break them up too much.
  7. Drop rounded balls of dough onto a lined baking sheet, spacing them about 2 inches apart. Bake for 18-20 minutes or until the cookies are lightly golden around the edges.
  8. Allow the cookies to cool for 5 minutes on the baking sheet before transferring them to a wire rack. Once cooled, dust them with powdered sugar.

Notes

For a citrusy note, add a teaspoon of lemon zest to the dough.
