Ingredients
For the Turkey Burgers:
Ground turkey (preferably 94% lean)
1 diced jalapeño
¼ cup chopped cilantro
1 tablespoon coconut sugar
1 teaspoon ground turmeric
1 teaspoon ground cumin
1 tablespoon yellow curry powder
Salt & pepper to taste
For the Curry Tahini Sauce:
½ cup tahini
2 tablespoons fresh lemon juice
2 garlic cloves, minced
1 tablespoon pure maple syrup
1 tablespoon yellow curry powder
1 teaspoon fresh grated ginger
½ teaspoon turmeric
¼ teaspoon cayenne pepper
Salt & pepper to taste
For the Slaw:
1 cup shredded carrots
1 cup shredded cabbage (red or green)
2 green onions, sliced
1 tablespoon apple cider vinegar
1 tablespoon toasted sesame oil
1 tablespoon maple syrup
Salt & pepper to taste
For Serving:
Burger buns (gluten-free if needed)
Instructions
Make the Burgers:
In a large bowl, combine ground turkey with diced jalapeño, cilantro, coconut sugar, turmeric, cumin, curry powder, salt, and pepper. Mix until well combined. Form the mixture into 4 patties.
Cook the Burgers:
Grill the patties over medium-high heat for 4-5 minutes per side, or cook in a skillet with a little oil until the internal temperature reaches 165°F. Set aside.
Prepare the Slaw:
In a separate bowl, combine shredded carrots, cabbage, green onions, apple cider vinegar, sesame oil, and maple syrup. Season with salt and pepper, and toss to combine.
Make the Curry Tahini Sauce:
Whisk together tahini, lemon juice, garlic, maple syrup, curry powder, ginger, turmeric, cayenne, and salt and pepper until smooth.
Assemble:
Serve the turkey patties on buns (or lettuce wraps for gluten-free), topping them with slaw and curry tahini sauce. Enjoy!
