Description

This Jalapeno Peach Chicken combines sweet, spicy, and savory flavors in a vibrant grilled dish. Juicy peaches and fresh jalapenos top tender marinated chicken for a colorful and satisfying meal.


Ingredients

4 boneless, skinless chicken breasts

2 ripe peaches, diced

2 jalapenos, finely chopped (seeds removed for less heat)

2 tablespoons olive oil

2 tablespoons honey

1 tablespoon soy sauce

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon smoked paprika

Salt, to taste

Black pepper, to taste

Fresh cilantro, for garnish (optional)


Instructions

  1. In a bowl, mix together olive oil, honey, soy sauce, minced garlic, ground cumin, smoked paprika, salt, and pepper until well combined.
  2. Place the chicken breasts in a resealable plastic bag or shallow dish. Pour the marinade over the chicken, ensuring each piece is well coated. Cover and refrigerate for at least 30 minutes.
  3. Preheat the grill to medium-high heat or heat a grill pan over medium-high on the stovetop.
  4. In a separate bowl, combine the diced peaches and chopped jalapenos with a pinch of salt. Gently mix and let sit to allow the flavors to meld.
  5. Remove the chicken from the marinade and place on the grill. Cook for 6 to 8 minutes per side, until the internal temperature reaches 165°F (75°C).
  6. During the last few minutes of cooking, spoon the peach salsa over each chicken breast to warm slightly.
  7. Remove the chicken from the grill and let rest for 5 minutes before slicing.
  8. Garnish with fresh cilantro if desired and serve immediately.

Notes

Substitute nectarines or mango for peaches for a different sweetness.

Leave some jalapeno seeds in or add red pepper flakes for extra heat.

Bake at 400°F (200°C) for 20 to 25 minutes if not grilling.

Store leftovers in an airtight container in the refrigerator for up to 3 days.
