Description

Jalapeno Peach Chicken combines the heat of jalapenos with the sweetness of peaches in a tangy, honey-infused sauce, making it a bold and flavorful dish that’s perfect for any occasion.


Ingredients

4 chicken breasts

1 tablespoon olive oil

1 teaspoon salt

1 teaspoon black pepper

2 jalapenos, diced

3 peaches, diced

1/4 cup honey

1/4 cup apple cider vinegar

1/4 cup water

1 tablespoon cornstarch


Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and pepper on both sides.
  3. Heat the olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and sear for 3-4 minutes on each side until golden brown. Remove the chicken from the skillet and set it aside.
  4. In the same skillet, add the diced jalapenos and peaches. Cook for 2-3 minutes until softened.
  5. In a small bowl, whisk together the honey, apple cider vinegar, water, and cornstarch until smooth. Pour the mixture over the jalapenos and peaches, stirring well. Bring to a simmer and let it cook for 2 minutes.
  6. Return the seared chicken breasts to the skillet, spooning some sauce over the chicken. Let it simmer for 1 more minute.
  7. Transfer the skillet to the preheated oven and bake for 20-25 minutes, or until the chicken reaches an internal temperature of 165°F (75°C).
  8. Remove the skillet from the oven, let the chicken rest for a few minutes, and serve with the sauce and peaches.

Notes

You can substitute chicken thighs for a juicier version of the dish. Adjust the cooking time accordingly to ensure the internal temperature reaches 165°F (75°C).

If you prefer a milder version, remove the seeds and membranes from the jalapenos or use fewer jalapenos.

Frozen peaches can be used if fresh ones are not available, but be sure to thaw and drain any excess liquid.

If the sauce is too thin, cook for a few extra minutes to thicken or add more cornstarch mixed with water.

Experiment with other fruits like mango or pineapple to create your own variation of the dish.
