The Kardashian Salad, also known as the La Scala Chopped Salad, is a crisp, savory, and tangy chopped salad made with iceberg lettuce, salami, chickpeas, mozzarella, and a bold parmesan-forward vinaigrette that’s fresh, satisfying, and restaurant-worthy.
Ingredients
1 medium head iceberg lettuce (about 1 lb)
1/4 lb salami, thinly sliced
1 (19 oz) can chickpeas, drained and rinsed
1 cup shredded mozzarella cheese
1/3 cup extra-virgin olive oil
1/4 cup red wine vinegar
2 teaspoons Dijon mustard (or 1 teaspoon dry mustard)
1/2 teaspoon salt, to taste
1/2 teaspoon black pepper, to taste
1/4 cup grated Parmesan cheese
Extra grated Parmesan and black pepper for serving (optional)
Instructions
- Remove the stem from the iceberg lettuce and cut the head into wedges.
- Chop the lettuce into 1-inch pieces.
- Rinse the chopped lettuce thoroughly, drain well, and place in a large bowl.
- Add the sliced salami, chickpeas, and shredded mozzarella to the bowl.
- Toss gently until evenly combined.
- In a mason jar or small bowl, combine olive oil, red wine vinegar, Dijon mustard, salt, pepper, and grated Parmesan.
- Shake or whisk until the dressing is fully emulsified.
- Pour desired amount of dressing over the salad.
- Toss well to coat evenly.
- Finish with extra Parmesan and black pepper if desired, then serve immediately.
Notes
Keep dressing separate until serving to maintain crunch.
Iceberg lettuce provides the signature crisp texture.
