Ingredients
- 4 boneless, skinless chicken breasts
- 2 large eggs
- 1 tsp garlic powder
- 1 tsp Italian seasoning
- Salt and pepper, to taste
- 1 cup grated parmesan cheese
- 1/2 cup all-purpose flour
- 2 tbsp olive oil
- 4 tbsp butter
- 3 garlic cloves, minced
- 1/4 cup fresh lemon juice
- 1/2 cup chicken broth
- 1/2 tsp Italian seasoning
- Salt and pepper, to taste
Instructions
- Slice chicken breasts in half horizontally. Use a meat mallet to pound to an even thickness.
- In one bowl, whisk together eggs, garlic powder, Italian seasoning, salt, and pepper. In another, combine parmesan cheese and flour.
- Dip the chicken into the egg mixture and then coat in the parmesan mixture, shaking off excess.
- Heat olive oil in a skillet over medium-high heat. Cook the chicken for 4-5 minutes per side until golden brown and the internal temperature reaches 165°F.
- Remove chicken and set aside. In the same skillet, melt butter, sauté garlic until fragrant, and whisk in lemon juice, chicken broth, Italian seasoning, and pepper. Simmer for 2 minutes.
- Return chicken to skillet, coating with the lemon butter sauce. Serve immediately.
