Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 large eggs
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt and pepper, to taste
  • 1 cup grated parmesan cheese
  • 1/2 cup all-purpose flour
  • 2 tbsp olive oil
  • 4 tbsp butter
  • 3 garlic cloves, minced
  • 1/4 cup fresh lemon juice
  • 1/2 cup chicken broth
  • 1/2 tsp Italian seasoning
  • Salt and pepper, to taste

Instructions

  • Slice chicken breasts in half horizontally. Use a meat mallet to pound to an even thickness.
  • In one bowl, whisk together eggs, garlic powder, Italian seasoning, salt, and pepper. In another, combine parmesan cheese and flour.
  • Dip the chicken into the egg mixture and then coat in the parmesan mixture, shaking off excess.
  • Heat olive oil in a skillet over medium-high heat. Cook the chicken for 4-5 minutes per side until golden brown and the internal temperature reaches 165°F.
  • Remove chicken and set aside. In the same skillet, melt butter, sauté garlic until fragrant, and whisk in lemon juice, chicken broth, Italian seasoning, and pepper. Simmer for 2 minutes.
  • Return chicken to skillet, coating with the lemon butter sauce. Serve immediately.

Notes

  • For a lighter version, skip the parmesan crust and simply season the chicken.
