Ingredients
2 cups long-grain white rice (such as basmati)
4 tablespoons butter
1/2 teaspoon salt
3 cups water
Zest and juice of 1 lemon
1/8 teaspoon turmeric (optional)
1 tablespoon chopped parsley (for garnish)
Instructions
-
Rinse the Rice: Rinse the rice under cold water until the water runs clear, about 1 minute.
-
Toast the Rice: In a medium pot, melt butter over medium heat. Add the rinsed rice and salt. Toast the rice for 3 minutes, stirring occasionally, until slightly golden.
-
Cook the Rice: Add water, lemon zest, and lemon juice to the pot. Bring to a boil, then reduce heat to low. Cover and simmer for 15 minutes.
-
Let the Rice Rest: Remove the pot from heat and let it sit, covered, for 5-10 minutes to finish cooking and let the flavors meld.
-
Finish and Serve: Fluff the rice with a fork, sprinkle with turmeric (if using), and garnish with chopped parsley before serving.
Notes
Add Nuts: Toasted almonds or cashews add crunch and flavor.
Herb Variations: Substitute parsley with cilantro or mint for a fresh twist.
Spicy Lemon Rice: Add red pepper flakes or fresh chopped chili for heat.
Vegan Option: Use olive oil or vegan butter instead of dairy butter.
