Ingredients

4 large Russet potatoes (or Yukon Gold for a creamier texture)

1 cup avocado oil (or vegetable/canola oil)

Salt, to taste

2 cups birria meat (tender beef or goat)

1 cup birria consomé (for drizzling)

1 cup grated English white cheddar (or mild Monterey Jack)

1 cup guacamole (or substitute with sour cream)

¼ cup chopped green onions (or chives)


Instructions

  1. Prep the Potatoes: Peel and cut the potatoes into uniform ¼-inch fries.
  2. First Fry: Heat avocado oil in a deep skillet or fryer to 325°F (160°C). Fry in batches for 4–5 minutes until tender but pale. Remove and rest on paper towels.
  3. Second Fry: Raise the oil temperature to 375°F (190°C). Fry the potatoes again for 2–3 minutes until golden brown and crispy.
  4. Season: Drain fries and immediately sprinkle with salt while hot.
  5. Assemble: Place hot fries on a serving tray or plate. Layer with birria meat, spoon over consomé, and sprinkle cheese over the top.
  6. Top It Off: Add dollops of guacamole and a sprinkle of green onions. Serve hot.
