Description

A rich and flavorful Low-Carb Creamy Tuscan Salmon with a creamy sauce made from cherry tomatoes, spinach, and Parmesan cheese, perfect for a quick weeknight dinner or a special occasion.


Ingredients

4 salmon fillets (about 6 oz each)

Salt and pepper, to taste

2 tablespoons olive oil

1 cup heavy cream

1 cup cherry tomatoes, halved

2 cups fresh spinach

3 cloves garlic, minced

1 teaspoon Italian seasoning

1/4 teaspoon red pepper flakes (optional)

1/4 cup grated Parmesan cheese

Fresh basil, for garnish


Instructions

  1. Season the salmon fillets with salt and pepper on both sides.
  2. In a large skillet, heat the olive oil over medium-high heat. Add the salmon fillets and cook for about 4-5 minutes on each side, or until they are cooked through and golden brown. Remove the salmon from the skillet and set aside.
  3. In the same skillet, reduce the heat to medium and add the minced garlic. Sauté for about 30 seconds until fragrant.
  4. Add the cherry tomatoes and cook for 2-3 minutes until they begin to soften.
  5. Stir in the spinach and continue to cook until it wilts, about 1-2 minutes.
  6. Pour in the heavy cream and add the Italian seasoning, red pepper flakes, and Parmesan cheese. Stir well to combine and bring to a gentle simmer.
  7. Return the salmon fillets to the skillet, spooning the creamy sauce over to coat them. Let it simmer for another 2-3 minutes to heat through.
  8. Taste and adjust seasoning if necessary, adding more salt or pepper as desired.
  9. Garnish with fresh basil before serving.

Notes

For a lighter option, you can use half-and-half or coconut cream instead of heavy cream.

If the sauce thickens too much during storage, add a splash of cream or broth to loosen it up when reheating.

This recipe is suitable for keto diets as it is low in carbs and high in healthy fats.

You can substitute spinach with other leafy greens like kale or arugula.
