Ingredients
Base mixture:
1/2 cup natural peanut butter (no sugar added)
1/4 cup butter or coconut oil
1/4 cup unsweetened cocoa powder
1/2 cup powdered erythritol or monk fruit sweetener
1 teaspoon vanilla extract
Pinch of salt
Mix-ins for texture:
1 cup unsweetened coconut flakes (large flakes preferred)
1/2 cup chopped pecans or almonds
2 tablespoons oat fiber (optional)
Instructions
- Line a baking sheet with parchment paper.
- In a microwave-safe bowl, melt the butter or coconut oil in 30-second intervals until fully melted.
- Stir in the peanut butter until smooth and well combined.
- Whisk in cocoa powder, powdered sweetener, vanilla extract, and salt until the mixture is silky and lump-free.
- Quickly fold in the coconut flakes, chopped nuts, and oat fiber (if using) until evenly coated.
- Drop heaping tablespoons of the mixture onto the prepared baking sheet and flatten slightly.
- Freeze for 30 minutes or refrigerate for 1–2 hours until firm.
