Keto Meat Crust Pizza (Meatza) offers a low-carb, flavorful twist on traditional pizza with a savory ground beef crust topped with melted cheddar cheese. The optional cilantro crema adds a tangy finish to balance the richness, making it a perfect option for those on a keto or low-carb diet.


Ingredients

For the Crust:

1 pound lean ground beef

½ onion, finely minced

1 egg

1 cup cauliflower rice

2 teaspoons chili powder

1 teaspoon cumin

1 teaspoon salt

½ teaspoon black pepper

1 teaspoon garlic powder

For the Topping:

1 cup shredded cheddar cheese

For the Cilantro Crema (optional):

⅓ cup cilantro leaves, loosely packed

½ cup sour cream

1 tablespoon lime juice

1 clove fresh garlic


Instructions

  1. Preheat the Oven: Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Prepare the Meat Crust: In a large mixing bowl, combine the ground beef, minced onion, egg, cauliflower rice, chili powder, cumin, salt, black pepper, and garlic powder. Mix until fully incorporated.
  3. Form the Crust: Press the meat mixture onto the prepared baking sheet into a circular pizza crust, about ½-inch thick.
  4. Bake the Crust: Bake the crust in the preheated oven for 15–20 minutes, until browned at the edges and the center is fully cooked through.
  5. Add Cheese: Remove the crust from the oven, sprinkle the shredded cheddar cheese evenly over the top, and return it to the oven for 5–7 minutes until the cheese is melted and bubbly.
  6. Prepare the Cilantro Crema (Optional): While the pizza bakes, blend the cilantro, sour cream, lime juice, and garlic in a blender or food processor until smooth. Set aside.
  7. Serve: Once the cheese is melted and bubbly, remove the pizza from the oven and drizzle with cilantro crema before serving, if desired.
