1 cup long grain white rice
2 cups reduced-sodium chicken or beef broth (extra as needed)
16 oz chunky tomato salsa
15 oz can black beans, drained and rinsed
15 oz can pinto beans, drained and rinsed
1 ½ cups shredded Cheddar Jack cheese
