Description

This Mexican Beef and Rice Skillet is a flavorful, one-pan meal packed with seasoned ground beef, rice, beans, and vegetables. It’s a quick and easy dinner solution, ideal for busy weeknights. With protein-rich ingredients and the perfect blend of Mexican spices, this dish is sure to become a family favorite.

Ingredients

1 pound lean ground beef

1 cup diced onion (white or yellow)

1 red bell pepper, diced

1 yellow bell pepper, diced

3 cloves garlic, minced

3 tablespoons tomato paste

1 tablespoon taco seasoning

Salt and pepper to taste

1 cup long grain white rice

2 cups reduced-sodium chicken or beef broth (extra as needed)

16 oz chunky tomato salsa

15 oz can black beans, drained and rinsed

15 oz can pinto beans, drained and rinsed

1 ½ cups shredded Cheddar Jack cheese

Instructions

  • Cook the Beef: Heat a large skillet over medium heat. Add the ground beef and cook until browned, stirring regularly. Drain any excess grease, then return the beef to the skillet.

  • Add Vegetables: Add the diced onion and bell peppers to the skillet, cooking for about 2 minutes until softened.

  • Cook Garlic and Spices: Stir in the minced garlic and cook for 30 seconds, stirring constantly. Add the tomato paste, taco seasoning, salt, and pepper. Cook for another minute to combine the flavors.

  • Add Rice and Liquids: Stir in the rice, broth, salsa, black beans, and pinto beans. Mix well to combine all ingredients.

  • Simmer: Cover the skillet and simmer for 15-20 minutes, or until the rice is tender. Stir occasionally, adding extra broth if the mixture gets too dry.

  • Add Cheese: Remove the skillet from heat and sprinkle the shredded Cheddar Jack cheese over the top. Cover and let sit for 5 minutes to allow the cheese to melt.

  • Serve: Serve the skillet with guacamole, fresh cilantro, or any other favorite toppings.

Notes

Add extra toppings like sour cream or jalapeños for more flavor.

If you prefer a spicier dish, consider adding diced green chilies or a dash of hot sauce.

For a lighter version, you can reduce the amount of cheese or substitute with a lower-fat option.
