These Mini Caramel Apple Cheesecakes feature a buttery graham cracker crust, creamy cheesecake filling, and a warm cinnamon-apple caramel topping. Perfectly portioned for parties or holidays, they deliver all the cozy fall flavors in a bite-sized treat.
Ingredients
1 1/2 cups graham cracker crumbs
1/4 cup sugar
6 tablespoons unsalted butter, melted
16 oz cream cheese, softened
1/2 cup sour cream
1/2 cup sugar
2 teaspoons vanilla extract
2 large eggs
2 medium apples, peeled, cored, and chopped
1 tablespoon butter
1/4 cup brown sugar
1/4 teaspoon cinnamon
1/4 cup heavy cream
1/4 cup caramel sauce
Instructions
- Preheat oven to 325°F (163°C) and line a muffin tin with cupcake liners.
- In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press the mixture into each liner to form the crust.
- In a large bowl, beat cream cheese until smooth. Add sour cream, sugar, and vanilla; mix until creamy.
- Add eggs one at a time, mixing after each addition. Pour the cheesecake batter over the prepared crusts.
- Bake for 18–20 minutes, until centers are set. Cool completely before removing from the tin.
- For the topping, melt butter in a skillet over medium heat. Add chopped apples, brown sugar, and cinnamon; cook 5–7 minutes until soft and caramelized.
- Stir in heavy cream and simmer 2–3 minutes until the sauce thickens. Let cool.
- Spoon apple topping over cooled cheesecakes and drizzle with caramel sauce before serving.
