Description

These Mini Chocolate Fudge Cakes are rich, decadent, and perfectly portioned for individual servings. With a fudgy texture and a simple ingredient list, they bake quickly and are customizable with toppings like whipped cream, berries, or ice cream. The perfect chocolate dessert for any occasion!

Ingredients

For the Cakes:

  • ½ cup semi-sweet chocolate chips
  • 4 tablespoons salted butter
  • 2 large eggs
  • ¼ cup all-purpose flour
  • ½ tsp espresso powder (optional)
  • ½ tsp vanilla extract

For Toppings (Optional):

  • Powdered sugar
  • Fresh berries
  • Whipped cream
  • Ice cream

Instructions

  • Prepare the Pans:
Preheat the oven to 400°F (200°C). Line the bottoms of four tartlet pans with parchment paper and spray the sides with non-stick spray.

  • Melt the Chocolate & Butter:
In a microwave-safe bowl, combine the chocolate chips and butter. Microwave in 20-second intervals, stirring in between, until smooth.

  • Whisk the Eggs:
Beat the eggs on medium-low speed until frothy, then increase speed until light and fluffy.

  • Combine the Ingredients:
Stir in the flour and optional espresso powder. Gently fold the melted chocolate mixture into the beaten eggs until well combined.

  • Bake the Cakes:
Divide the batter evenly into the prepared tartlet pans. Bake for 15 minutes, or until the tops are firm.

  • Serve:
Cool slightly before topping with optional toppings like powdered sugar, fresh berries, whipped cream, or ice cream.

Notes

  • For a spicy kick, add a pinch of cayenne pepper or cinnamon to the batter.
  • To add texture, fold in chopped walnuts or pecans into the batter.
  • You can make these in one large cake by using a small cake pan, adjusting the baking time to 20-25 minutes.
