Ingredients
For the Cakes:
- ½ cup semi-sweet chocolate chips
- 4 tablespoons salted butter
- 2 large eggs
- ¼ cup all-purpose flour
- ½ tsp espresso powder (optional)
- ½ tsp vanilla extract

Instructions

 Preheat the oven to 400°F (200°C). Line the bottoms of four tartlet pans with parchment paper and spray the sides with non-stick spray.

Melt the Chocolate & Butter: 
 In a microwave-safe bowl, combine the chocolate chips and butter. Microwave in 20-second intervals, stirring in between, until smooth.

Whisk the Eggs: 
 Beat the eggs on medium-low speed until frothy, then increase speed until light and fluffy.

Combine the Ingredients: 
 Stir in the flour and optional espresso powder. Gently fold the melted chocolate mixture into the beaten eggs until well combined.

Bake the Cakes: 
 Divide the batter evenly into the prepared tartlet pans. Bake for 15 minutes, or until the tops are firm.

Serve: 
 Cool slightly before topping with optional toppings like powdered sugar, fresh berries, whipped cream, or ice cream.
Notes
