Description

These Mini Gozleme Parcels are crispy, golden bites filled with tender spinach and creamy feta, inspired by traditional Turkish gozleme. Perfectly portioned for snacking or entertaining, they’re buttery, flaky, and packed with flavor. Served warm with a squeeze of lemon, they’re simple to make yet look beautifully impressive on any platter.


Ingredients

280 g baby spinach

40 g butter, melted

2 tbsp extra virgin olive oil

4 sheets Mountain Bread or thin wraps

160 g smooth feta, crumbled

Lemon wedges, to serve


Instructions

  1. Place half the spinach in a microwave-safe bowl and cook on high for 2 minutes, tossing halfway through, until wilted. Transfer to a plate to cool slightly. Repeat with remaining spinach.
  2. Combine melted butter and olive oil in a small bowl. Place one sheet of Mountain Bread on a work surface and brush both sides generously with the butter mixture.
  3. Cut the sheet into quarters. Place a small pile of spinach and a crumble of feta in the center of each piece. Fold the corners inward to enclose the filling, pressing gently to seal. Brush the tops with a little more butter mixture.
  4. Heat a large frying pan over medium heat. Cook the parcels seam-side down for 2–3 minutes or until golden, brushing tops with butter mixture as they cook. Flip and cook for another 2–3 minutes until crisp and golden. Transfer to a rack while cooking the rest.
  5. Serve warm with fresh lemon wedges for squeezing.

Notes

Add herbs like mint, parsley, or dill to the filling for extra freshness.

For extra flavor, include caramelized onion, mushrooms, or shredded chicken.

Use filo pastry or lavash bread as an alternative to wraps.

Bake at 200°C for 15 minutes instead of frying for a lighter option.

Reheat in an oven or air fryer to maintain crispness—avoid microwaving.
