Description
A light and fragrant mint rice made with fluffy basmati rice, savory aromatics, fresh mint, and creamy feta for a refreshing, flavorful side dish.
Ingredients
1 cup basmati rice
2 tablespoons olive oil
1/2 medium onion, chopped
2 cloves garlic, minced
16 ounces chicken or vegetable broth
1/2 cup feta cheese, diced
3 tablespoons fresh mint, minced
Instructions
- Heat the olive oil in a medium saucepan over medium heat.
- Add the chopped onion and cook until soft and translucent.
- Stir in the minced garlic and cook for about 30 seconds until fragrant.
- Add the basmati rice and stir to coat, toasting lightly for about 1 minute.
- Pour in the broth and bring to a boil.
- Reduce the heat to low, cover, and simmer for 18–20 minutes until the liquid is absorbed and the rice is tender.
- Remove from heat and fluff the rice gently with a fork.
- Fold in the minced mint and diced feta cheese while the rice is still warm.
- Taste and adjust seasoning if needed, then serve warm.
Notes
Fresh mint provides the best flavor.
Fold in feta gently so it softens without fully melting.
Add a squeeze of lemon juice for extra brightness.
Great served alongside grilled meats or roasted vegetables.
