Description

A light and fragrant mint rice made with fluffy basmati rice, savory aromatics, fresh mint, and creamy feta for a refreshing, flavorful side dish.


Ingredients

1 cup basmati rice

2 tablespoons olive oil

1/2 medium onion, chopped

2 cloves garlic, minced

16 ounces chicken or vegetable broth

1/2 cup feta cheese, diced

3 tablespoons fresh mint, minced


Instructions

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and cook until soft and translucent.
  3. Stir in the minced garlic and cook for about 30 seconds until fragrant.
  4. Add the basmati rice and stir to coat, toasting lightly for about 1 minute.
  5. Pour in the broth and bring to a boil.
  6. Reduce the heat to low, cover, and simmer for 18–20 minutes until the liquid is absorbed and the rice is tender.
  7. Remove from heat and fluff the rice gently with a fork.
  8. Fold in the minced mint and diced feta cheese while the rice is still warm.
  9. Taste and adjust seasoning if needed, then serve warm.

Notes

Fresh mint provides the best flavor.

Fold in feta gently so it softens without fully melting.

Add a squeeze of lemon juice for extra brightness.

Great served alongside grilled meats or roasted vegetables.
