Ingredients
1 cup raisins
1 cup currants
1 cup chopped dates
1 cup chopped dried apricots
1/2 cup chopped walnuts
1/2 cup chopped pecans
1 cup unsalted butter, softened
1 cup brown sugar, packed
4 large eggs
2 cups all-purpose flour, sifted
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon ground nutmeg
1/2 teaspoon salt
1/4 cup orange juice
1/4 cup apple juice
Instructions
- Preheat the oven to 325°F (160°C). Grease and flour a loaf pan.
- In a mixing bowl, combine the raisins, currants, chopped dates, dried apricots, walnuts, and pecans. Set aside.
- In another bowl, cream the softened butter and brown sugar together until light and fluffy.
- Add the eggs one at a time, mixing well after each addition.
- In a separate bowl, whisk together the sifted flour, baking powder, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the butter mixture, alternating with the orange juice and apple juice, mixing gently until smooth.
- Fold the fruit and nut mixture into the batter until evenly distributed.
- Pour the batter into the prepared loaf pan and smooth the top with a spatula.
- Bake for about 1 hour 30 minutes, or until a toothpick inserted in the center comes out clean.
- Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Notes
