Ingredients
12 ounces spaghetti, cooked al dente
2 boneless, skinless chicken breasts, cut into bite-sized pieces
1 cup shredded Monterey Jack cheese
1 medium yellow onion, finely chopped
3 garlic cloves, minced
1 cup chicken broth
½ cup heavy cream
2 tablespoons olive oil
1 tablespoon butter
1 teaspoon paprika
1 teaspoon Italian seasoning
Salt and black pepper, to taste
Fresh parsley for garnish
Instructions
- Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
- Heat olive oil in a large skillet over medium heat. Season the chicken pieces with paprika, Italian seasoning, salt, and black pepper. Cook the chicken for 5-7 minutes until golden brown and fully cooked. Remove from the skillet and set aside.
- In the same skillet, melt butter over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
- Pour in chicken broth and heavy cream. Stir and bring to a simmer. Reduce heat and let the sauce thicken for about 5 minutes.
- Add the cooked spaghetti and chicken back into the skillet. Toss to coat the pasta and chicken in the creamy sauce.
- Sprinkle shredded Monterey Jack cheese over the top. Cover and let sit for 2-3 minutes until the cheese melts.
- Remove from heat, garnish with fresh parsley, and serve warm.
Notes
If you prefer a lighter version, you can substitute the heavy cream with half-and-half or whole milk.
For extra flavor, sauté vegetables like mushrooms or bell peppers and add them to the sauce before mixing in the pasta.
If you want a spicier version, add a pinch of red pepper flakes or cayenne pepper to the sauce.
