Description

Ingredients

12 ounces spaghetti, cooked al dente

2 boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup shredded Monterey Jack cheese

1 medium yellow onion, finely chopped

3 garlic cloves, minced

1 cup chicken broth

½ cup heavy cream

2 tablespoons olive oil

1 tablespoon butter

1 teaspoon paprika

1 teaspoon Italian seasoning

Salt and black pepper, to taste

Fresh parsley for garnish


Instructions

  1. Cook the spaghetti according to the package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a large skillet over medium heat. Season the chicken pieces with paprika, Italian seasoning, salt, and black pepper. Cook the chicken for 5-7 minutes until golden brown and fully cooked. Remove from the skillet and set aside.
  3. In the same skillet, melt butter over medium heat. Add the chopped onion and cook for 3-4 minutes until softened. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  4. Pour in chicken broth and heavy cream. Stir and bring to a simmer. Reduce heat and let the sauce thicken for about 5 minutes.
  5. Add the cooked spaghetti and chicken back into the skillet. Toss to coat the pasta and chicken in the creamy sauce.
  6. Sprinkle shredded Monterey Jack cheese over the top. Cover and let sit for 2-3 minutes until the cheese melts.
  7. Remove from heat, garnish with fresh parsley, and serve warm.

Notes

If you prefer a lighter version, you can substitute the heavy cream with half-and-half or whole milk.

For extra flavor, sauté vegetables like mushrooms or bell peppers and add them to the sauce before mixing in the pasta.

If you want a spicier version, add a pinch of red pepper flakes or cayenne pepper to the sauce.
