Ingredients
1/2 cup butter, room temperature
1 cup granulated sugar
1 cup packed light brown sugar
1 teaspoon vanilla extract
1 whole egg + 2 egg yolks, separated
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1 cup mini marshmallows
1 cup semi-sweet chocolate chips
Instructions
- Preheat the oven to 350°F (175°C) and grease or line an 8×8-inch or 9×9-inch baking pan with parchment paper.
- In a large bowl, cream together the butter, granulated sugar, brown sugar, and vanilla extract until light and fluffy.
- Beat in the whole egg and the two egg yolks, one at a time, until well incorporated.
- In a separate bowl, whisk together the flour, baking powder, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
- Fold in the mini marshmallows and chocolate chips until evenly distributed.
- Spread the batter evenly into the prepared pan and smooth the top with a spatula.
- Bake for 25–30 minutes, or until the edges are golden and a toothpick inserted in the center comes out clean.
- Allow the bars to cool completely in the pan before slicing into squares.
Notes
Use an 8×8-inch pan for thicker bars or a 9×9-inch pan for thinner ones.
Underbake slightly for extra chewy texture.
Fold marshmallows evenly through the batter to prevent melting away.
Store at room temperature up to 3 days or freeze up to 2 months.
Reheat in the microwave for 10–15 seconds for a warm, gooey texture.
