Ingredients
¼ cup unsalted butter
1 pound white and cremini mushrooms, cut into quarters
1 head bok choy, chopped (plus extra green leaves for garnish)
4 green onions, sliced
2 tablespoons minced garlic (or more to taste)
8 slices fresh ginger, quartered
¼ cup lime juice
7 cups chicken broth
½ cup chopped fresh cilantro
Instructions
- Gather and prepare all ingredients before cooking.
- In a large stockpot over medium heat, melt the butter.
- Add mushrooms, chopped bok choy, green onions, garlic, and ginger. Drizzle with lime juice and cook for 2–3 minutes, stirring gently, until fragrant and lightly softened.
- Increase heat to medium-high and pour in the chicken broth. Bring to a boil.
- Reduce heat to low and simmer for about 5 minutes, until vegetables are tender but still vibrant.
- Ladle soup into bowls and garnish with chopped cilantro and extra bok choy leaves before serving.
Notes
You can use a mix of mushrooms, including portobello or shiitake.
For a vegetarian version, substitute vegetable broth for chicken broth.
Simmer briefly to prevent the bok choy from overcooking.
Cooked noodles or rice can be added to make the soup more filling.
