Description

No-Bake Frankenstein Cheesecake Bars are a spooky, creamy, and festive Halloween dessert. With a cookies-and-cream base, minty vegan cheesecake filling, and fun chocolate decorations, these bars are vegan, dairy-free, egg-free, and easily gluten-free. Perfect for parties, dessert tables, or a seasonal sweet treat.


Ingredients

For the base: 300g Oreo cookies, 100g dairy-free butter

For the cheesecake filling: 200g cashew nuts (soaked overnight), 500g dairy-free cream cheese, 150g icing/powdered sugar, 20g coconut cream, 2 teaspoons mint extract/flavoring, green food gel

For the decorations: Pretzel sticks, edible silver glitter, 200g dairy-free dark chocolate, 50g dairy-free white chocolate


Instructions

  1. Line an 8×8 inch square cake tin with greaseproof paper.
  2. Melt the dairy-free butter over low heat and pour into a mixing bowl.
  3. Crush the Oreo cookies into fine crumbs and mix with the melted butter until it resembles wet sand. Press firmly into the lined tin.
  4. Drain the soaked cashew nuts and blend with dairy-free cream cheese, icing sugar, coconut cream, mint extract, and a drop of green food gel until smooth. Pour over the biscuit base and tap to remove air bubbles. Refrigerate overnight to set.
  5. Remove the cheesecake from the tin and cut into bars.
  6. Melt the white chocolate and pipe small circles for eyes on a lined tray. Freeze for 10 minutes.
  7. Melt the dark chocolate with a drop of black food gel. Pipe pupils onto the white chocolate circles and add facial details on the bars, like hair, scars, and mouths.
  8. Break pretzel sticks, brush lightly with water, dust with edible silver glitter, and attach as Frankenstein’s bolts. Serve and enjoy.

Notes

Use gluten-free cookies for a fully gluten-free dessert.

Swap mint extract for chocolate, orange, or vanilla flavoring.

Add a layer of fruit puree or jam between the base and filling.

Experiment with different decoration styles: candy eyes, sprinkles, or colored chocolate.
