Ingredients

  • 3 cups unsweetened shredded coconut

  • 2 ½ tablespoons coconut oil (refined or unrefined)

  • ¼ teaspoon pink salt or sea salt

  • 3 teaspoons pure vanilla extract

  • 4 tablespoons maple syrup

  • 4 teaspoons coconut flour or almond flour (organic preferred)


Instructions

  • Melt the Coconut Oil:
    In a small saucepan or skillet, melt the coconut oil over low heat.

  • Combine the Wet Ingredients:
    Once melted, turn off the heat and whisk in the salt, vanilla extract, and maple syrup until well combined.

  • Prepare the Coconut Mixture:
    In a Nutri-Bullet, food processor, or blender, combine the shredded coconut and coconut flour (or almond flour).

  • Mix the Wet and Dry Ingredients:
    Pour the melted coconut oil mixture into the coconut and flour mix. Blend until the mixture comes together and everything is evenly incorporated.

  • Cool the Mixture:
    Transfer the blended mixture to the refrigerator for about 10 minutes to cool, making it easier to form into balls.

  • Form the Macaroons:
    Once cooled, scoop about a tablespoon of the mixture at a time and shape it into small balls, placing each on a plate.

  • Set the Macaroons:
    If your kitchen is cool, you can let the macaroons harden at room temperature. If it’s warm, place them in the refrigerator to set. (The texture is best at room temperature.)
