Description

It’s a great alternative to traditional lasagna, and it doesn’t require turning on the oven, making it a hassle-free, cool, and satisfying meal for summer.


Ingredients

½ cup ricotta cheese

3 tbsp grated Parmesan cheese

3 tbsp fresh basil (optional)

Fresh vegetables (such as zucchini, tomatoes, or spinach)

Olive oil (for drizzling)

Salt and pepper, to taste


Instructions

Prepare the Cheese Mixture:
In a bowl, combine the ricotta, Parmesan, and fresh basil (if using). Mix well until smooth.

Assemble the Lasagna:
In a dish, layer fresh vegetables and cheese mixture, creating layers just like a traditional lasagna. Skip cooking the noodles and instead layer fresh ingredients. Drizzle a little olive oil and season with salt and pepper between the layers for added flavor.

Chill:
