Ingredients
2 tbsp olive oil
1 medium onion, diced
1 green bell pepper, diced
1 lb ground beef (90% lean)
2 cloves garlic, minced
1 1/2 cups beef broth
1 15 oz can tomato sauce
1 14.5 oz can diced tomatoes, with juices
1 tbsp Worcestershire sauce
1 tsp Italian seasoning
2 bay leaves
1 tsp paprika
Salt and pepper, to taste
2 cups uncooked macaroni noodles
1 1/2 cups shredded cheddar cheese
Optional garnish: extra cheese, fresh parsley
Instructions
- Heat olive oil in a large pot over medium-high heat until shimmering.
- Add diced onion and green bell pepper. Sauté until tender, about 3-4 minutes.
- Add ground beef and cook until browned, breaking it up as it cooks, about 5–7 minutes.
- Stir in minced garlic and cook for 30 seconds until fragrant.
- Add beef broth, tomato sauce, diced tomatoes with juices, Worcestershire sauce, Italian seasoning, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
- Add uncooked macaroni noodles to the pot. Cook 10–12 minutes, stirring occasionally, until pasta is al dente.
- Remove bay leaves. Stir in shredded cheddar cheese until melted and creamy. Taste and adjust seasoning.
- Garnish with extra cheese or fresh parsley if desired and serve warm.
