Description

Ingredients

2 tbsp olive oil

1 medium onion, diced

1 green bell pepper, diced

1 lb ground beef (90% lean)

2 cloves garlic, minced

1 1/2 cups beef broth

1 15 oz can tomato sauce

1 14.5 oz can diced tomatoes, with juices

1 tbsp Worcestershire sauce

1 tsp Italian seasoning

2 bay leaves

1 tsp paprika

Salt and pepper, to taste

2 cups uncooked macaroni noodles

1 1/2 cups shredded cheddar cheese

Optional garnish: extra cheese, fresh parsley


Instructions

  1. Heat olive oil in a large pot over medium-high heat until shimmering.
  2. Add diced onion and green bell pepper. Sauté until tender, about 3-4 minutes.
  3. Add ground beef and cook until browned, breaking it up as it cooks, about 5–7 minutes.
  4. Stir in minced garlic and cook for 30 seconds until fragrant.
  5. Add beef broth, tomato sauce, diced tomatoes with juices, Worcestershire sauce, Italian seasoning, paprika, salt, and pepper. Bring to a boil, then reduce heat and simmer for 20 minutes.
  6. Add uncooked macaroni noodles to the pot. Cook 10–12 minutes, stirring occasionally, until pasta is al dente.
  7. Remove bay leaves. Stir in shredded cheddar cheese until melted and creamy. Taste and adjust seasoning.
  8. Garnish with extra cheese or fresh parsley if desired and serve warm.

Notes

Vegetarian Option: Use lentils or mushrooms in place of ground beef.

Pasta Swap: Try penne, fusilli, or gluten-free pasta.
