Description
Old Bay Shrimp Burritos are a delicious combination of tender shrimp seasoned with Old Bay seasoning, wrapped in a soft flour tortilla, and topped with fresh ingredients like lettuce, tomato, avocado, and a creamy lime sour cream sauce.
Ingredients
1 lb medium shrimp, peeled and deveined
2 tablespoons Old Bay seasoning
1 tablespoon olive oil
4 large flour tortillas
1 cup shredded lettuce
1 large tomato, diced
1 avocado, sliced
½ cup sour cream
1 tablespoon lime juice
½ cup shredded cheddar cheese
¼ cup fresh cilantro, chopped
1 small red onion, thinly sliced
2 tablespoons salsa (optional)
Instructions
- In a medium bowl, toss the shrimp with Old Bay seasoning, ensuring they are evenly coated. Let them sit for about 5 minutes.
- Heat the olive oil in a large skillet over medium-high heat. Add the seasoned shrimp and cook for 2-3 minutes on each side, or until they are opaque and cooked through. Remove from heat and set aside.
- While the shrimp is cooking, chop the lettuce, dice the tomato, slice the avocado, and thinly slice the red onion.
- In a small bowl, mix together the sour cream and lime juice until smooth and set aside.
- Warm the flour tortillas in a dry skillet over low heat for 1-2 minutes on each side, or microwave them for 20-30 seconds.
- On each tortilla, start with a layer of shredded lettuce, followed by diced tomato, red onion, avocado, and cooked shrimp. Drizzle the lime sour cream sauce over the shrimp and sprinkle with shredded cheddar cheese and fresh cilantro.
- Fold in the sides of the tortilla and roll it up tightly, ensuring the fillings are securely wrapped inside. Serve immediately, sliced in half if desired, with additional salsa or chips on the side.
Notes
If you prefer spicier burritos, add more Old Bay seasoning, jalapeños, or hot sauce to the filling.
For a vegetarian option, swap the shrimp for black beans, grilled vegetables, or tofu.
To make these burritos gluten-free, use gluten-free tortillas available at most grocery stores.
The lime sour cream sauce can be made ahead and stored in the refrigerator for up to 1-2 days.
These burritos can be frozen. Wrap them tightly and store in the freezer for up to 3 months. Reheat by baking in the oven or microwaving.
