Ingredients

  • 1 baked pie crust
  • ¼ cup butter
  • 1 cup sugar (for filling)
  • ¼ cup flour
  • ½ cup cocoa powder
  • 2 cups milk
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 3 egg whites
  • ¼ teaspoon cream of tartar
  • ½ cup sugar (for meringue)

Instructions

  1. Prepare and bake the pie crust according to package or homemade recipe instructions. Allow it to cool completely.
  2. In a saucepan, whisk together cocoa powder, 1 cup sugar, and flour. Slowly add milk while whisking until smooth.
  3. Stir in egg yolks and butter. Cook over medium heat, stirring constantly, until the mixture thickens. Remove from heat and stir in vanilla extract.
  4. Pour the warm chocolate filling into the cooled pie crust and smooth the top.
  5. In a clean bowl, beat egg whites and cream of tartar to soft peaks. Gradually add ½ cup sugar while continuing to beat until stiff, glossy peaks form.
  6. Spread the meringue evenly over the chocolate filling, sealing it to the edges of the crust.
  7. Bake at 350°F (175°C) for 10–15 minutes, or until the meringue is golden brown.
  8. Let the pie cool completely at room temperature before slicing and serving.
