Ingredients
1 cup butter, melted and slightly cooled
1 cup granulated white sugar
1 cup packed dark brown sugar
4 large eggs
1 tbsp pure vanilla extract
1 cup all-purpose flour
1 cup Dutch-processed or unsweetened cocoa powder
1 tsp espresso powder (optional)
1 tsp kosher salt
1 1/4 cups chopped chocolate, divided
Instructions
- Preheat the oven to 350°F (175°C). Spray a 9×13-inch baking pan with nonstick spray, line with parchment paper leaving an overhang, then spray again.
- In one large bowl, whisk together the melted butter, granulated sugar, and brown sugar until the sugars are mostly dissolved.
- Add the eggs and vanilla extract and whisk until smooth and well combined.
- Sift in the flour and cocoa powder, then add the salt and espresso powder if using.
- Stir gently until just combined, being careful not to overmix.
- Fold in 1 cup of the chopped chocolate.
- Spread the batter evenly into the prepared pan and sprinkle the remaining 1/4 cup of chopped chocolate over the top.
- Bake on the middle rack for 25–30 minutes, until the top is just set.
- Remove from the oven and allow to cool completely before lifting out and cutting into squares.

Dissolving the sugar well helps create shiny crackly tops.
Do not overbake; brownies continue to set as they cool.
Flaky sea salt on top adds a great sweet-salty contrast.
Warm individual squares slightly for extra gooey brownies.
