Description

Orange Creamsicle Baked Oatmeal combines the bright, tangy flavors of orange with the wholesome goodness of oats for a healthy and comforting breakfast. Naturally sweetened with maple syrup and topped with a creamy vanilla-orange yogurt drizzle, this baked oatmeal is perfect for a nutritious start to your day!

Ingredients

2 eggs

1/4 cup pure maple syrup

1/4 cup butter or coconut oil, melted

1 cup milk (any kind)

1 1/2 cups rolled oats (gluten-free if needed)

1 teaspoon vanilla extract

1/2 teaspoon almond extract

Zest and juice of 1 orange

1 teaspoon baking powder

Pinch of salt

For the Vanilla-Orange Yogurt Drizzle:

1/2 cup Greek yogurt

1 tablespoon powdered sugar

1 tablespoon orange juice

1/2 teaspoon vanilla extract

Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C) and grease a baking dish.

  • Prepare Oatmeal Base: In a large bowl, whisk together the eggs, maple syrup, melted butter or coconut oil, milk, vanilla extract, almond extract, orange juice, and orange zest.

  • Mix Dry Ingredients: Stir in the rolled oats, baking powder, and a pinch of salt until well combined.

  • Bake: Pour the mixture into the prepared baking dish and spread it evenly. Bake for 40-45 minutes until the top is golden and the oatmeal is set in the middle.

  • Make Yogurt Drizzle: While the oatmeal is baking, mix together the yogurt, powdered sugar, orange juice, and vanilla extract. Refrigerate until ready to serve.

  • Serve: Let the oatmeal cool slightly, then drizzle with the yogurt mixture and enjoy!

Notes

Add-ins: Add chocolate chips, dried cranberries, or chopped nuts like walnuts or pecans to customize your oatmeal.

Boost Nutrition: Add chia seeds or flaxseeds for extra fiber and omega-3s.

Fruit Twist: Swap the orange for fresh or frozen berries for a different seasonal flavor.
