Description

This Overnight Sausage Pancake Breakfast Casserole combines savory sausage, fluffy pancakes, and maple syrup for a deliciously easy and satisfying meal. Prepared the night before, it’s ready to bake in the morning for a hassle-free breakfast or brunch.


Ingredients

1 lb breakfast sausage

2 cups pancake mix

2 cups whole milk

4 large eggs

½ cup pure maple syrup

¼ cup melted butter


Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet, cook the sausage over medium heat until browned and crumbly. Drain excess fat and set aside.
  3. In a large bowl, whisk together pancake mix, milk, eggs, and melted butter until smooth.
  4. Grease a 9×13-inch baking dish and spread half of the pancake batter into the dish. Add half of the cooked sausage and drizzle with maple syrup.
  5. Pour the remaining pancake batter over the sausage layer, then add the remaining sausage and drizzle with more maple syrup.
  6. Bake in the preheated oven for 25-30 minutes, until golden brown and puffed up, with a slightly crisp top and fluffy inside.
  7. Allow the casserole to cool for a few minutes before slicing. Serve warm with additional maple syrup or your favorite breakfast sides.

Notes

For extra flavor, sprinkle shredded cheddar cheese on top of the sausage before adding the second layer of batter.

Feel free to add diced bell peppers, onions, or mushrooms to the sausage for extra veggies.

Incorporate fresh berries or banana slices into the pancake batter for a fruity twist.
