Description

Paleo Greek Lemon Chicken Soup is a healthy, nourishing dish bursting with fresh lemon flavor, tender chicken, and nutrient-packed vegetables. With a grain-free cauliflower rice substitute, this light yet filling soup is perfect for any season and easily adaptable for keto, AIP, and Whole30 diets.


Ingredients

  • 2 tbsp olive oil
  • 1 yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup carrot, diced
  • 2 cups cauliflower rice
  • 6 cups chicken broth
  • ½ cup lemon juice
  • 1 lb shredded chicken (preferably pre-cooked)
  • 2 egg yolks (omit for AIP)
  • 2 tbsp fresh herbs (such as parsley or dill)
  • Salt and pepper to taste

Instructions

  • Sauté Vegetables:
    In a large pot, heat olive oil over medium heat. Add diced onion and sauté until soft and translucent.

  • Add Garlic and Carrots:
    Add minced garlic and diced carrots, sauté for another 5 minutes until the carrots begin to soften.

  • Stir in Cauliflower Rice:
    Stir in cauliflower rice and cook for another 5 minutes.

  • Add Broth and Lemon Juice:
    Pour in the chicken broth and lemon juice. Add fresh herbs, then season with salt and pepper. Stir well and bring to a simmer, cooking for 15 minutes.

  • Add Shredded Chicken and Kale:
    Stir in shredded chicken and kale. Continue to cook until the kale wilts.

  • Temper Egg Yolks:
    In a separate bowl, whisk together egg yolks. Slowly add 1 cup of hot broth from the soup to the yolk mixture, whisking continuously to temper. Then, pour the yolk mixture back into the pot, stirring well.

  • Serve:
    Remove from heat, adjust seasoning as needed, and serve warm.

Notes

  • Keto Version: Omit the carrots and use zucchini or extra cauliflower rice to lower the carb count.
  • AIP Version: Omit egg yolks and use compliant chicken broth.
  • Add-ins: You can add spinach, zucchini, or mushrooms for additional nutrients.
