Description

Paleo Orange-Kissed Loaf with Dark Chocolate Glaze is a fragrant, gluten-free treat that combines the zest of fresh orange with a rich dark chocolate topping. Made with almond and coconut flours and naturally sweetened with maple syrup, this loaf is perfect for those following a paleo diet or anyone craving a light yet indulgent dessert or snack.


Ingredients

For the Loaf:

2 cups almond flour

1/2 cup coconut flour

1 tsp baking soda

1/4 tsp salt

4 large eggs

1/4 cup coconut oil, melted

1/4 cup maple syrup

1/2 cup fresh orange juice

Zest of 1 orange

1/4 cup unsweetened almond milk

For the Dark Chocolate Glaze:

1/2 cup dark chocolate (85% cocoa)

1 tbsp coconut oil


Instructions

  • Preheat Oven: Preheat your oven to 350°F (175°C) and line a loaf pan with parchment paper.

  • Prepare Dry Ingredients: In a medium bowl, whisk together almond flour, coconut flour, baking soda, and salt.

  • Mix Wet Ingredients: In another bowl, whisk together eggs, melted coconut oil, maple syrup, orange juice, orange zest, and almond milk until well combined.

  • Combine Wet and Dry Ingredients: Add the wet ingredients to the dry ingredients and mix until a thick batter forms.

  • Bake: Pour the batter into the prepared loaf pan and smooth the top. Bake for 35-40 minutes, or until the loaf is golden and a toothpick inserted comes out clean. Let the loaf cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely.

  • Make the Glaze: While the loaf cools, melt the dark chocolate and coconut oil together in a microwave-safe bowl in 30-second intervals, stirring in between until smooth.

  • Drizzle the Glaze: Once the loaf is completely cooled, drizzle the melted dark chocolate glaze over the top and garnish with additional orange zest, if desired.

Notes

Chocolate Chips: Add chocolate chips to the batter for an extra chocolatey flavor.

Orange Glaze: If you prefer, substitute the dark chocolate glaze with an orange glaze made from powdered sugar and orange juice for a lighter touch.

Sweetness: If you’d like a sweeter loaf, you can increase the maple syrup or add a bit of coconut sugar.
