Description

Ingredients

  • 1 pound baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 8 ounces fresh green beans, trimmed and cut in half
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 2 tablespoons butter
  • Fresh parsley, chopped, for garnish

Instructions

  1. Bring a medium pot of salted water to a boil. Add the halved baby potatoes and cook for about 8 minutes until just fork-tender. Drain and set aside.
  2. In a large skillet, heat the olive oil over medium-high heat.
  3. Add the diced onion and cook for 2-3 minutes until softened.
  4. Stir in the minced garlic and cook for another 30 seconds until fragrant.
  5. Add the blanched potatoes to the skillet, cut side down, and cook for 4-5 minutes without stirring to develop a golden, crispy crust.
  6. Flip the potatoes and add the green beans to the skillet. Season with smoked paprika, salt, and pepper.
  7. Cook for another 5-6 minutes, stirring occasionally, until the green beans are tender-crisp and the potatoes are evenly browned.
  8. Stir in the butter until melted and everything is well coated.
  9. Garnish with fresh chopped parsley and serve warm.
